Ingredients

The chicken

  • 3 pounds boneless skinless chicken breast, cut into small cubes
  • cups buttermilk

The flour mixture

  • 4 cups flour
  • 2 teaspoons salt
  • 1 teaspoon freshly ground pepper

The sauce

  • 1 large bottle Franks Red Hot
  • 2 tablespoons butter
  • to taste cayenne pepper

Instructions

  1. Combine flour, salt, and pepper in a bowl.
  2. Dip the chicken into the flour mixture, then into the buttermilk, and back into the flour mixture.
  3. Fry the chicken in vegetable oil at 360 degrees for about 5-6 minutes until golden brown.
  4. In a saucepan, melt butter and add Franks Red Hot and cayenne pepper, bringing to a boil and then simmering for 5 minutes.
  5. After frying, coat the chicken with the sauce using your preferred method.
  6. Place the sauced chicken on a cookie sheet and bake in a preheated oven at 350 degrees for 20-30 minutes until crispy.
