Ingredients

The wings

  • 3 lbs Chicken wings (flats and drumettes)
  • 2 tsp Baking powder
  • 1 tsp Sea salt
  • ¼ tsp Black pepper

The sauce

  • ½ cup Buffalo sauce
  • ¼ cup Unsalted butter (melted)

Optional serving suggestions

  • to taste Blue cheese dressing
  • to taste Celery sticks

Instructions

  1. Preheat the oven to 400°F (204°C) and set up two oven-safe racks inside two rimmed baking sheets.
  2. In a large bowl, toss the chicken wings with baking powder, salt, and pepper until evenly coated.
  3. Arrange the wings in a single layer on the racks.
  4. Bake for 40-45 minutes until the wings are crispy and the internal temperature reaches 165°F (74°C).
  5. In a separate bowl, mix the buffalo sauce and melted butter.
  6. Once the wings are done, toss them in the buffalo sauce mixture.
  7. Serve with blue cheese dressing and celery sticks if desired.
