Ingredients

The Wings

  • 4 lbs chicken wings, cut into wings and drumettes
  • 4 tsp aluminum-free baking powder
  • 1 tsp salt
  • 1 tsp freshly ground black pepper
  • 3 Tbsp unsalted butter
  • 1 cup hot sauce, such as Frank's Red Hot Original
  • tsp cornstarch (optional)
  • 1 Tbsp honey

The Blue Cheese Dip

  • cup natural sour cream
  • ½ cup mayonnaise
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • 1 Tbsp minced fresh parsley
  • 3 oz blue cheese, finely crumbled

Instructions

  1. Preheat the oven to 250 degrees and prepare a baking sheet with aluminum foil and a wire rack.
  2. Whisk together baking powder, salt, and pepper in a small bowl.
  3. Dry the chicken wings and toss them with the baking powder mixture.
  4. Arrange the wings on the wire rack and bake for 30 minutes on the lower middle rack.
  5. Increase the oven temperature to 425 degrees and move the wings to the upper middle rack.
  6. Bake until golden brown and crisp, about 45 to 50 minutes, rotating halfway through.
  7. In a separate bowl, toss the baked wings with the desired amount of buffalo sauce.
  8. For the blue cheese dip, whisk together cornstarch and water, then melt butter in a saucepan.
  9. Add hot sauce and honey to the melted butter, then stir in the cornstarch mixture until thickened.
  10. Mix all blue cheese dip ingredients together and let rest in the refrigerator for at least 30 minutes.
