Ingredients

The Wings

  • 3 lbs chicken wings
  • 1 Tbsp baking powder
  • 1 tsp salt

The Sauce

  • cup ghee or butter
  • ½ cup hot pepper sauce
  • 1 Tbsp apple cider vinegar
  • 1 tsp garlic powder
  • ½ tsp paprika
  • ½ tsp salt
  • a pinch cayenne pepper (optional)

Instructions

  1. Preheat the oven to 250℉ and prepare a baking sheet with foil and a rack.
  2. Place the chicken wing parts in a bowl, sprinkle with baking powder and salt, and toss to coat.
  3. Arrange the wings on the rack in a single layer without touching.
  4. Bake in the oven for 30 minutes at 250℉.
  5. Increase the oven temperature to 425℉ and bake for an additional 20 minutes.
  6. Rotate the pan and bake for another 20 minutes until crispy and browned.
  7. While baking, prepare the sauce by combining ghee, hot pepper sauce, vinegar, garlic powder, paprika, salt, and cayenne in a saucepan over medium heat until melted and combined.
  8. Transfer the cooked wings to a container, drizzle with half of the sauce, and toss to coat.
  9. Serve with the remaining sauce or a dipping sauce of choice.
