Ingredients

The beets

  • 6–7 medium beets or beetroot

The water

  • cups water

Instructions

  1. Wash and trim the beets, cutting the stems to about ½ inch long.
  2. Place the steaming rack in the Instant Pot and arrange the beets on top.
  3. Pour 1½ cups of water into the Instant Pot.
  4. Lock the lid on the Instant Pot and set it to 'Pressure Cooker' mode, cooking on high pressure for 12 minutes.
  5. After cooking, perform a quick release of the pressure.
  6. Unlock the lid and test the beets with a knife; if they pierce easily, they are done. If not, cook for an additional 2 to 5 minutes under high pressure.
  7. Let the beets rest for 10 minutes, then slide the skin off using your hands.
  8. Slice the beets and serve, or store in an airtight container in the refrigerator for up to a week.
