Instructions
- Wash and trim the beets, cutting the stems to about ½ inch long.
- Place the steaming rack in the Instant Pot and arrange the beets on top.
- Pour 1½ cups of water into the Instant Pot.
- Lock the lid on the Instant Pot and set it to 'Pressure Cooker' mode, cooking on high pressure for 12 minutes.
- After cooking, perform a quick release of the pressure.
- Unlock the lid and test the beets with a knife; if they pierce easily, they are done. If not, cook for an additional 2 to 5 minutes under high pressure.
- Let the beets rest for 10 minutes, then slide the skin off using your hands.
- Slice the beets and serve, or store in an airtight container in the refrigerator for up to a week.
