- Scrub the beets well and trim greens, leaving a 1-inch stem.
- Pour cold water into the Instant Pot, add the trivet, and place the beets on it.
- Secure the lid with the valve in the sealing position and set to Manual High Pressure for 20 minutes.
- After cooking, allow a natural release of pressure for 10 minutes, then quick release any remaining pressure.
- Transfer the cooked beets to a cutting board and let them cool.
- Once cooled, press the beets gently to peel away the skin.
