The beets

  • 6 large beets

The water

  • 1 cup cold water

Instructions

  1. Scrub the beets well and trim greens, leaving a 1-inch stem.
  2. Pour cold water into the Instant Pot, add the trivet, and place the beets on it.
  3. Secure the lid with the valve in the sealing position and set to Manual High Pressure for 20 minutes.
  4. After cooking, allow a natural release of pressure for 10 minutes, then quick release any remaining pressure.
  5. Transfer the cooked beets to a cutting board and let them cool.
  6. Once cooled, press the beets gently to peel away the skin.
