Ingredients

The beets

  • 6 medium beets (about 2 inches in diameter)

The cooking liquid and seasonings

  • 1 cup water
  • Kosher salt (optional)
  • Freshly ground black pepper (optional)
  • Balsamic vinegar (optional)
  • Extra virgin olive oil (optional)

Instructions

  1. Wash and trim the beets, keeping the stems about ½-inch long.
  2. Add 1 cup of water to the Instant Pot.
  3. Place a steamer insert inside and arrange the beets in a single layer.
  4. Lock the lid and set the valve to 'Sealing'. Cook on high pressure for 15 minutes.
  5. Manually release the pressure and unlock the lid once the steam dissipates.
  6. Check the beets for doneness; if they are not tender, cook for an additional 2 to 5 minutes under high pressure.
  7. Once cooled, slice off the tops and slide off the skins.
  8. Optionally, slice the beets and season with salt, pepper, balsamic vinegar, and olive oil before serving.
