Instructions
- Wash and trim the beets, keeping the stems about ½-inch long.
- Add 1 cup of water to the Instant Pot.
- Place a steamer insert inside and arrange the beets in a single layer.
- Lock the lid and set the valve to 'Sealing'. Cook on high pressure for 15 minutes.
- Manually release the pressure and unlock the lid once the steam dissipates.
- Check the beets for doneness; if they are not tender, cook for an additional 2 to 5 minutes under high pressure.
- Once cooled, slice off the tops and slide off the skins.
- Optionally, slice the beets and season with salt, pepper, balsamic vinegar, and olive oil before serving.
