The beets

  • 1–2 pounds fresh beets

The cooking liquid

  • 1 cup water

Instructions

  1. Prepare the beets by removing any greens and large stems.
  2. Place a trivet or steamer basket in the Instant Pot and add one cup of water.
  3. Set the beets on top of the trivet, ensuring they do not exceed the max fill line.
  4. Set the cooking time: 12 minutes for small beets, 16 minutes for medium beets, and 20 minutes for large beets.
  5. After cooking, let the pressure release naturally for 10 minutes before using quick release.
  6. Remove the lid and transfer the beets to a plate.
  7. Cut off the tops of each beet and rinse under cold water to remove the skin.
