Instructions
- Boil 1 cup of water in a small pot or tea kettle.
- Once boiling, add honey and sliced ginger, then steep for 20 minutes.
- Juice the lemons to yield 1½ cups of lemon juice.
- Strain the ginger from the syrup using a mesh strainer.
- In a large pitcher, combine the lemon juice, 4 cups of water, and the honey ginger syrup, mixing well.
- Serve immediately over ice or refrigerate until ready to serve.
