Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, whisk together almond flour, baking powder, and salt.
- Stir in maple syrup and vanilla until a sticky dough forms.
- Scoop a tablespoon of dough, roll it into a ball, and place it on the baking sheet, spacing them 2 inches apart.
- Flatten each ball to about ½-inch thick.
- Bake for about 12 minutes, turning the tray halfway through, until edges are golden brown.
- Let the cookies cool completely on a wire rack.
- For optional chocolate coating, chop the chocolate and melt it using a double boiler or microwave.
- Dip the bottoms of the cooled cookies in melted chocolate and place them back on parchment to set.
