Ingredients

The cookies

  • 2 cups finely ground almond flour
  • ½ teaspoon baking powder
  • teaspoon kosher salt
  • cup dark maple syrup
  • 2 teaspoons vanilla extract
  • 3.5 ounces dark chocolate bar (70-90% cacao)

Homemade Grain-Free Baking Powder

  • ¼ cup cream of tartar
  • 2 tablespoons baking soda
  • ½ teaspoon tapioca starch

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together almond flour, baking powder, and salt.
  3. Stir in maple syrup and vanilla until a sticky dough forms.
  4. Scoop a tablespoon of dough, roll it into a ball, and place it on the baking sheet, spacing them 2 inches apart.
  5. Flatten each ball to about ½-inch thick.
  6. Bake for about 12 minutes, turning the tray halfway through, until edges are golden brown.
  7. Let the cookies cool completely on a wire rack.
  8. For optional chocolate coating, chop the chocolate and melt it using a double boiler or microwave.
  9. Dip the bottoms of the cooled cookies in melted chocolate and place them back on parchment to set.
