Ingredients

Dry Mix

  • 3 ⅓ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cardamom
  • ½ teaspoon ground cloves
  • ½ teaspoon ground allspice
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon salt

Wet Mix

  • 1 cup unsalted butter, melted and cooled slightly
  • 1 ½ cups firmly packed brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 12 ounces dark chocolate chunks

Instructions

  1. Whisk together the dry ingredients and spices in a medium bowl and set aside.
  2. In a stand mixer, beat the melted butter, brown sugar, and white sugar until fluffy.
  3. Add the eggs one at a time and then the vanilla extract, mixing until combined.
  4. Gradually add the flour mixture and mix until no flour specks remain.
  5. Fold in the chocolate chunks and chill the dough for at least 1 hour.
  6. Preheat the oven to 350°F and line two baking sheets with parchment paper.
  7. Scoop the cookie dough onto the prepared baking sheets, spacing them apart.
  8. Bake for 7 to 8 minutes until light to medium brown, then sprinkle with salt.
