Ingredients

The soup

  • 2 tablespoons olive oil
  • 1 medium white onion, diced
  • 1 lb. lean ground turkey
  • ½ teaspoon salt
  • 1 packet (~3 tablespoons) taco seasoning
  • 5 cloves garlic, minced
  • 1 15-oz. can black beans, drained and rinsed
  • 1 4-oz. can green chiles
  • 1 cup frozen corn
  • 1 15-oz. can diced tomatoes
  • 3 tablespoons tomato paste
  • 2 teaspoons apple cider vinegar
  • ½ tablespoon Franks Hot Sauce
  • 4 cups chicken broth
  • ½ cup fresh cilantro, finely chopped

Optional toppings

  • to taste Greek yogurt
  • to taste shredded cheese

Instructions

  1. Heat a large pot over medium heat and add olive oil.
  2. Once the oil is fragrant, add the diced onion and sauté until translucent.
  3. Add the ground turkey, salt, and taco seasoning, and sauté for 2-3 minutes.
  4. Stir in the remaining ingredients except for cilantro and bring to a boil.
  5. Reduce the heat and let the soup simmer for 20 minutes.
  6. Stir in the cilantro and serve with your favorite toppings.
