Homemade Chocolate Chip Cookies

Ingredients

  • ¾ cup butter or earth balance
  • ¾ cup brown sugar
  • ½ cup sugar
  • 1 egg
  • 1 egg yolk
  • 1 ½ tbsp vanilla
  • 1 ¾ cup all-purpose flour
  • ¾ tsp baking soda
  • 1 tsp salt
  • 1 cup mini dark chocolate chips

Instructions

  1. Preheat the oven to 350°F and line 2 baking trays with parchment paper.
  2. In a medium bowl, combine flour, baking soda, and salt, then set aside.
  3. In a large bowl, mix butter, sugars, and vanilla using a hand mixer until light and pale.
  4. Slowly mix in the egg and yolk one at a time until just combined.
  5. Add the flour mixture and mix until well combined.
  6. Fold in the mini chocolate chips.
  7. Cover the bowl with plastic wrap and refrigerate for 30-45 minutes.
  8. Scoop the dough into ping-pong size balls, about 2 tablespoons each.
  9. Roll the cookie dough balls until smooth.
  10. Add extra chocolate chips on top of the cookie dough balls.
  11. Space the cookie dough balls 2-3 inches apart on the baking trays.
  12. Bake for 11 minutes until slightly golden on the edges.
  13. Allow to cool on the trays for 5 minutes before transferring to a wire rack.
