Instructions
- Prepare the cinnamon sugar by mixing sugar and cinnamon in a baking dish.
- Make the ganache by combining chocolate chips and heavy cream, then heating until melted.
- In a saucepan, bring water, butter, vanilla, and salt to a simmer.
- Add flour all at once and stir until a dough forms, then cook for a minute.
- Remove from heat and let the dough cool for 5 minutes.
- Incorporate eggs one at a time, stirring until smooth.
- Heat oil in a deep pot to 325°F.
- Transfer dough to a piping bag and pipe churros into the hot oil.
- Fry churros until golden brown on both sides, then drain on paper towels.
- Roll churros in the cinnamon sugar and serve with warm ganache.
