Easy Churros

Instructions
- Make the cinnamon sugar by combining ½ cup sugar with cinnamon in a shallow bowl and set aside.
- Line a plate with paper towels.
- In a medium saucepan, combine water, sugar, butter, and salt, and heat until boiling.
- Remove from heat and whisk in flour until a soft ball forms, then let it cool for 2-3 minutes.
- Add eggs and vanilla to the mixture and blend until smooth.
- Heat oil in a pot to 375ºF.
- Fill a piping bag with the dough and pipe churros into the hot oil, cutting them to about 4-5 inches long.
- Fry churros for about 2 minutes on each side until golden brown.
- Remove churros and drain on paper towels, then roll in cinnamon-sugar mixture.
- For the chocolate sauce, whisk chocolate, cream, and vanilla in a saucepan until melted and smooth.
- Serve churros warm with chocolate sauce.
