The churro dough

Vegetable oil

The coating

granulated sugar

ground cinnamon
Instructions
- Whisk together sugar and cinnamon for the coating and set aside.
- Heat vegetable oil in a large pot to 360°F.
- In a saucepan, combine water, butter, sugar, and salt, and bring to a boil.
- Add flour, reduce heat, and stir until smooth.
- Transfer the mixture to a bowl and let cool for 5 minutes.
- Add vanilla and egg, then blend until smooth.
- Pipe the mixture into the preheated oil in 6-inch lengths and cut with scissors.
- Fry until golden brown, about 2 minutes per side.
- Drain on paper towels briefly, then roll in the cinnamon sugar mixture.
- Serve warm.
