Ingredients

The churro dough

  • 1 cup water
  • ¼ cup unsalted butter, diced into small cubes
  • 1 Tbsp granulated sugar
  • ¼ tsp salt
  • 1 cup all-purpose flour
  • 1 large egg
  • ½ tsp vanilla extract
  • Vegetable oil for frying

The coating

  • ½ cup granulated sugar
  • ¾ tsp ground cinnamon

Instructions

  1. Whisk together sugar and cinnamon for the coating and set aside.
  2. Heat vegetable oil in a large pot to 360°F.
  3. In a saucepan, combine water, butter, sugar, and salt, and bring to a boil.
  4. Add flour, reduce heat, and stir until smooth.
  5. Transfer the mixture to a bowl and let cool for 5 minutes.
  6. Add vanilla and egg, then blend until smooth.
  7. Pipe the mixture into the preheated oil in 6-inch lengths and cut with scissors.
  8. Fry until golden brown, about 2 minutes per side.
  9. Drain on paper towels briefly, then roll in the cinnamon sugar mixture.
  10. Serve warm.
