Ingredients

The dough

  • ½ cup salted butter
  • 1 cup milk
  • 1 cup all-purpose flour
  • 4 units eggs
  • ¼ teaspoon kosher salt

For frying

  • 3 inches peanut oil or other oil with a high smoke point

The coating

  • ½ cup granulated sugar
  • 2 teaspoons cinnamon

Instructions

  1. Combine butter and milk in a saucepan and heat until the butter melts.
  2. Whisk in the flour and stir until the mixture forms a glossy ball.
  3. Remove from heat and add eggs one at a time, mixing well after each addition.
  4. Let the dough sit for 15-20 minutes.
  5. Heat oil in a large skillet to 325°F.
  6. Mix sugar and cinnamon in a pie plate.
  7. Transfer dough to a pastry bag fitted with a star tip.
  8. Squeeze 3-inch lengths of dough into the hot oil, frying in batches.
  9. Cook for 3-4 minutes on one side until golden brown, then flip and cook for another 2-3 minutes.
  10. Transfer cooked churros to a paper towel-lined plate and keep warm in the oven.
  11. Toss churros in the cinnamon-sugar mix and serve immediately.
