Homemade Churros
Ingredients
The dough

peanut oil or other oil with a high smoke point
The coating

granulated sugar

cinnamon
Instructions
- Combine butter and milk in a saucepan and heat until the butter melts.
- Whisk in the flour and stir until the mixture forms a glossy ball.
- Remove from heat and add eggs one at a time, mixing well after each addition.
- Let the dough sit for 15-20 minutes.
- Heat oil in a large skillet to 325°F.
- Mix sugar and cinnamon in a pie plate.
- Transfer dough to a pastry bag fitted with a star tip.
- Squeeze 3-inch lengths of dough into the hot oil, frying in batches.
- Cook for 3-4 minutes on one side until golden brown, then flip and cook for another 2-3 minutes.
- Transfer cooked churros to a paper towel-lined plate and keep warm in the oven.
- Toss churros in the cinnamon-sugar mix and serve immediately.
