Ingredients

The doughnuts

  • 1 cup apple cider
  • 1 cup sugar
  • 3 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ teaspoon pumpkin pie spice
  • ¼ cup butter-flavored shortening
  • 2 large eggs
  • ½ cup buttermilk
  • 1 quart canola or peanut oil (for frying)

The spiced sugar

  • ¾ cup white sugar
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon pumpkin pie spice

Instructions

  1. Boil apple cider in a saucepan until reduced to ¼ cup, then cool.
  2. In a large bowl, mix shortening and sugar until light and fluffy, then add eggs one at a time.
  3. Stir in the reduced cider and buttermilk until combined.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice.
  5. Combine the dry ingredients with the wet mixture until just blended.
  6. Chill the dough by rolling it out to ½ inch thick and refrigerating for about 1 hour.
  7. Cut out doughnut shapes and chill again while preparing the oil.
  8. Heat oil to 325 degrees Fahrenheit in a deep saucepan.
  9. Fry doughnuts until golden brown, about 90 seconds to 2 minutes per side.
  10. Remove doughnuts and coat in spiced sugar.
