Instructions
- Boil apple cider in a saucepan until reduced to ¼ cup, then cool.
- In a large bowl, mix shortening and sugar until light and fluffy, then add eggs one at a time.
- Stir in the reduced cider and buttermilk until combined.
- In a separate bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice.
- Combine the dry ingredients with the wet mixture until just blended.
- Chill the dough by rolling it out to ½ inch thick and refrigerating for about 1 hour.
- Cut out doughnut shapes and chill again while preparing the oil.
- Heat oil to 325 degrees Fahrenheit in a deep saucepan.
- Fry doughnuts until golden brown, about 90 seconds to 2 minutes per side.
- Remove doughnuts and coat in spiced sugar.
