Ingredients

The base

  • 1 cup Water
  • 1 large head Cauliflower, chopped
  • ¾ teaspoon Coarse Salt
  • ¼ teaspoon Pepper
  • 1 Tablespoon Butter
  • ¼ cup Parmesan Cheese, grated

Optional additions

  • to taste Roasted Garlic Cloves
  • ¼ cup Sour Cream
  • ½ cup Bacon, cooked & chopped
  • ¼ cup Chives, finely chopped
  • to taste More Parmesan

Instructions

  1. Pour water into the inner liner pot of the pressure cooker and place a steamer basket or trivet inside.
  2. Add the chopped cauliflower and secure the lid, setting the steam release knob to the Sealing position.
  3. Select Pressure Cook/Manual and set the timer for 4 minutes on high pressure.
  4. Once cooking is complete, turn off the pot and perform a quick release of the pressure.
  5. Transfer the cauliflower to a mixing bowl and mash it using a potato masher or preferred method.
  6. Mix in salt, pepper, and butter until well combined.
  7. Add parmesan cheese and mix thoroughly.
  8. Incorporate any optional extras as desired and serve immediately.
