Slow Cooker Mashed Cauliflower

Ingredients

  • 1 head cauliflower (2.5 to 3 pounds, chopped)
  • ¾ cup water (or more if cooking longer)
  • 2 cloves garlic, minced
  • ½-1 teaspoon fine sea salt, to taste
  • to taste black pepper

Instructions

  1. Combine the cauliflower, water, and garlic in the slow cooker and cover.
  2. Cook on high for 3 hours or low for 6 hours.
  3. Once tender, mash the cauliflower using an immersion blender or potato masher until smooth.
  4. Season with salt and pepper to taste, and add any additional herbs if desired.
  5. Keep the mashed cauliflower warm in the slow cooker until ready to serve.
  6. Store leftovers in an airtight container for up to a week.
