Black Garlic Tofu

Ingredients

The tofu

  • 12 oz extra firm tofu
  • 5–6 cloves black fermented garlic

The sauce

  • 3 tablespoons peanut or vegetable oil
  • 3 tablespoons water
  • 2 tablespoons soy sauce
  • 1 tablespoon sugar
  • salt and pepper to taste

Garnish

  • 1/8 cup chives and chive blossoms

Instructions

  1. Press the tofu with paper towels to remove moisture and cut it into ¾ inch cubes.
  2. Blend black garlic, oil, water, soy sauce, and sugar until combined.
  3. Heat oil in a wok or skillet on high heat, adding salt and pepper.
  4. Carefully slide the tofu into the hot oil and cook, turning every minute for about 10 minutes until crispy.
  5. Set the crispy tofu aside on a plate.
  6. Pour the black garlic sauce into the wok and stir for one minute until it darkens.
  7. Add the tofu back to the wok and toss to coat for about 30 seconds before serving.
  8. Top with fresh chives and chive blossoms.
