Ingredients

Tofu and Marinade

  • 1 lb firm or extra firm tofu
  • ¼ cup gluten-free tamari soy sauce
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon chili garlic sauce (optional)
  • 1 tablespoon rice wine vinegar
  • 2 teaspoons maple syrup
  • 1 clove garlic, finely grated
  • 2 teaspoons avocado oil
  • 1 tablespoon arrowroot starch
  • to taste ground black pepper

Sesame Garlic Sauce

  • ¼ cup gluten-free tamari soy sauce
  • 2 tablespoons maple syrup
  • 2 tablespoons well-stirred tahini (or peanut butter/almond butter)
  • 2 teaspoons fresh lime juice
  • 1 ½ teaspoons toasted sesame oil
  • 1 clove garlic, finely grated
  • 2 tablespoons sesame seeds, plus extra for garnish

Instructions

  1. Press the tofu for 15 minutes, then place it in a freezer-safe bag with the marinade.
  2. Whisk together the marinade ingredients and pour over the tofu, sealing the bag tightly.
  3. Freeze the tofu for at least 8 hours or overnight.
  4. Thaw the tofu in the refrigerator for about 8 hours, flipping occasionally.
  5. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  6. Pat the thawed tofu dry, discard the marinade, and cut it into 1-inch cubes.
  7. Toss the tofu cubes with avocado oil, arrowroot starch, and pepper until coated.
  8. Arrange the tofu on the baking sheet and roast for 30-35 minutes, flipping halfway through.
  9. While the tofu roasts, combine the sesame garlic sauce ingredients in a jar and shake to mix.
  10. Serve the tofu hot with rice or noodles, vegetables, and drizzle with the sesame garlic sauce.
