Sesame Garlic Sauce

well-stirred tahini (or peanut butter/almond butter)

fresh lime juice

sesame seeds, plus extra for garnish
Instructions
- Press the tofu for 15 minutes, then place it in a freezer-safe bag with the marinade.
- Whisk together the marinade ingredients and pour over the tofu, sealing the bag tightly.
- Freeze the tofu for at least 8 hours or overnight.
- Thaw the tofu in the refrigerator for about 8 hours, flipping occasionally.
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Pat the thawed tofu dry, discard the marinade, and cut it into 1-inch cubes.
- Toss the tofu cubes with avocado oil, arrowroot starch, and pepper until coated.
- Arrange the tofu on the baking sheet and roast for 30-35 minutes, flipping halfway through.
- While the tofu roasts, combine the sesame garlic sauce ingredients in a jar and shake to mix.
- Serve the tofu hot with rice or noodles, vegetables, and drizzle with the sesame garlic sauce.
