Homemade Pancake Mix

Ingredients

Dry Mix

  • 7 3/4 cups all-purpose flour
  • 1 3/4 cups dry non-fat milk powder
  • ½ cup granulated sugar
  • cup baking powder
  • 1 1/2 Tbsp salt

To Prepare Pancakes

  • 1 to 1 1/3 cups water
  • 3 Tbsp vegetable oil or melted butter
  • 1 large egg

Instructions

  1. Whisk together the dry mix ingredients in a large mixing bowl for about 1 1/2 minutes.
  2. Store the dry mix in an airtight container for up to 8 months.
  3. To prepare pancakes, preheat an electric griddle to 400°F.
  4. In a mixing bowl, whisk together water, oil, and egg until blended.
  5. Add 2 cups of the pancake mix and whisk until combined, being careful not to over-mix.
  6. Pour batter onto the griddle and cook until golden brown on both sides.
  7. Serve immediately with butter and maple syrup.
