Ingredients

The chicken and vegetables

  • 1 pound boneless skinless chicken breast, cut into 1 inch pieces
  • 2 ½ cups small broccoli florets
  • 1 tablespoon minced fresh ginger
  • 1 teaspoon minced garlic

The sauce

  • ¼ cup oyster sauce
  • ¼ cup low sodium chicken broth (or water)
  • 1 teaspoon granulated sugar
  • 2 teaspoons toasted sesame oil
  • 1 teaspoon soy sauce
  • 2 teaspoons cornstarch

The cooking essentials

  • 1 tablespoon + 1 teaspoon vegetable oil
  • to taste salt and pepper

Instructions

  1. Heat 1 teaspoon of oil in a large frying pan over medium heat and cook the broccoli for 3-4 minutes until tender.
  2. Add ginger and garlic to the pan and cook for an additional 30 seconds.
  3. Remove the broccoli mixture from the pan and keep warm.
  4. Wipe the pan clean, increase the heat to high, and add the remaining oil.
  5. Season the chicken with salt and pepper, then add it to the pan in a single layer, cooking for 3-4 minutes per side until golden brown.
  6. Return the broccoli mixture to the pan and heat for 2 more minutes.
  7. In a bowl, whisk together the oyster sauce, chicken broth, sugar, sesame oil, soy sauce, and cornstarch.
  8. Pour the sauce over the chicken and vegetables, bring to a boil, and cook for 1 more minute until the sauce thickens.
  9. Serve immediately, optionally with rice.
