Ingredients

The filling

  • 12 oz deli sliced corned beef, diced
  • 4 wedges The Laughing Cow Light Swiss Cheese Wedges, chopped
  • cup light Thousand Island dressing
  • ¼ cup sauerkraut
  • 6 slices 2% Swiss Cheese, each cut into 4 equal pieces

The wrappers

  • 24 pieces wonton wrappers

Instructions

  1. Preheat the oven to 375°F and prepare a standard muffin tin by lightly misting 12 cups with cooking spray.
  2. In a microwave-safe bowl, combine the corned beef and chopped Swiss cheese wedges, then heat for 1 ½ minutes until warm.
  3. Stir the mixture to coat the meat with melted cheese and mix in the Thousand Island dressing.
  4. Press a wonton wrapper into the bottom of each muffin cup, then fill with half of the corned beef mixture.
  5. Top each with a teaspoon of sauerkraut and a piece of 2% Swiss cheese.
  6. Cover with another wonton wrapper and repeat the layering with the remaining mixture and cheese.
  7. Bake for 18-20 minutes until the wontons are golden brown and heated through.
