Instructions
- Preheat the oven to 375°F and prepare a standard muffin tin by lightly misting 12 cups with cooking spray.
- In a microwave-safe bowl, combine the corned beef and chopped Swiss cheese wedges, then heat for 1 ½ minutes until warm.
- Stir the mixture to coat the meat with melted cheese and mix in the Thousand Island dressing.
- Press a wonton wrapper into the bottom of each muffin cup, then fill with half of the corned beef mixture.
- Top each with a teaspoon of sauerkraut and a piece of 2% Swiss cheese.
- Cover with another wonton wrapper and repeat the layering with the remaining mixture and cheese.
- Bake for 18-20 minutes until the wontons are golden brown and heated through.
