Ingredients

The pastry and cheese

  • 1 sheet puff pastry, defrosted
  • 16 oz wheel brie

The filling

  • 3 slices cooked bacon, chopped
  • cup pecans, chopped
  • cup dates, chopped (can sub cranberries or raisins)
  • 2 tsp fresh rosemary, chopped
  • cup honey

The egg wash

  • 1 egg

Instructions

  1. 1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. 2. Lay out the puff pastry and place the brie in the center.
  3. 3. In a bowl, mix together the chopped bacon, pecans, dates, rosemary, and honey.
  4. 4. Place the mixture on top of the brie and fold the sides of the pastry to cover the cheese.
  5. 5. In a small bowl, whisk the egg and brush it over the puff pastry.
  6. 6. Bake for 30-35 minutes or until golden brown, then let stand for 15 minutes before serving.
