Puff Pastry Crusted Baked Brie

Ingredients

  • 1 tbsp olive oil
  • 5 oz cherry tomatoes
  • ½ tsp salt
  • ¼ tsp cracked pepper
  • 1 sheet store-bought puff pastry, thawed
  • 250 g wheel of brie cheese
  • 1 egg fresh basil

Instructions

  1. Preheat the oven to 425°F and prepare a baking sheet with parchment paper.
  2. Allow the puff pastry to come to room temperature.
  3. Add cherry tomatoes to a baking dish, drizzle with olive oil, and season with salt and pepper. Roast for 20-25 minutes until golden.
  4. Set the baking tray in the oven for 10 minutes while preparing the brie.
  5. Slice off the thin rind from one side of the brie.
  6. Roll out the puff pastry and place the brie on top, cutting the pastry 2-3 inches around the cheese.
  7. Fold the edges of the pastry over the brie to wrap it.
  8. Whisk the egg and brush it over the puff pastry.
  9. Place the wrapped brie on the baking tray and bake for 20 minutes.
  10. Add the roasted tomatoes on top and bake for an additional 5-10 minutes until golden.
  11. Serve immediately with fresh basil and crackers.
