Puff Pastry Crusted Baked Brie

Instructions
- Preheat the oven to 425°F and prepare a baking sheet with parchment paper.
- Allow the puff pastry to come to room temperature.
- Add cherry tomatoes to a baking dish, drizzle with olive oil, and season with salt and pepper. Roast for 20-25 minutes until golden.
- Set the baking tray in the oven for 10 minutes while preparing the brie.
- Slice off the thin rind from one side of the brie.
- Roll out the puff pastry and place the brie on top, cutting the pastry 2-3 inches around the cheese.
- Fold the edges of the pastry over the brie to wrap it.
- Whisk the egg and brush it over the puff pastry.
- Place the wrapped brie on the baking tray and bake for 20 minutes.
- Add the roasted tomatoes on top and bake for an additional 5-10 minutes until golden.
- Serve immediately with fresh basil and crackers.
