Instructions
- Preheat the oven to 350°F and line two baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, cinnamon, and salt.
- In a large mixing bowl, cream together the butter and sugars until smooth.
- Add the egg and vanilla extract to the butter mixture, then mix in the mashed banana.
- Gradually add the flour mixture to the wet ingredients and mix until just combined.
- Stir in the oats and chocolate chips until evenly distributed.
- Use a cookie scoop or spoons to form balls of dough and place them on the prepared baking sheets, spacing them 2 inches apart.
- Bake for 10 to 12 minutes until golden around the edges but still soft in the center.
- Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a cooling rack.
