Ingredients

  • ½ cup whole wheat flour
  • 1 cup rolled oats
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • 1 tbsp chia seed
  • 1 tbsp ground flax seed
  • ¼ cup non-dairy milk
  • ¼ cup maple syrup
  • ½ tsp vanilla extract
  • 1 tbsp coconut oil
  • ½ banana
  • ¼ cup chocolate chips
  • ¼ cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment or a non-stick mat.
  2. In a large bowl, mix the dry ingredients together.
  3. Add the liquid ingredients to the dry mixture and stir well.
  4. In a small bowl, mash the banana and then stir it into the cookie mixture along with the chocolate chips and walnuts.
  5. Spoon the mixture onto the prepared baking sheet, leaving space between each cookie.
  6. Bake for 14-16 minutes, adjusting time based on cookie size, then cool on a rack for 10 minutes before serving.
