Fudgy Sweet Potato Brownies

Instructions
- Preheat the oven to 350°F and line an 8x8 inch baking dish with parchment paper.
- Blend the dates, sweet potato, peanut butter, eggs, and vanilla in a food processor until smooth.
- Add the cacao, almond flour, baking powder, and salt, and process until just combined.
- Fold in the chocolate chips with a spatula.
- Spread the thick batter into the prepared baking dish and sprinkle with walnuts if desired.
- Bake for 30-35 minutes until the brownies are set.
- Let cool for 20 minutes before slicing.
