Ingredients

  • 4 cups diced seedless watermelon
  • 1 cup diced red onion
  • cup chopped fresh cilantro leaves
  • ½ cup chopped fresh mint leaves
  • 1–2 pieces jalapeno(s), seeded and finely diced
  • 1 piece lime (zest and juice)

Instructions

  1. Combine all ingredients in a bowl and toss until well mixed.
  2. Serve immediately or refrigerate for up to 2 days.
