Pineapple Watermelon Salsa

Ingredients

  • 1 small bell pepper, chopped
  • 1 cup diced seedless watermelon
  • ½ cup diced fresh pineapple
  • cup chopped red onion or shallot
  • 1 jalapeño, deseeded and chopped
  • 2 teaspoon rice vinegar or dry sherry
  • ½ cup chopped fresh cilantro
  • 1 teaspoon lime juice
  • teaspoon salt/pepper to taste

Instructions

  1. Chop the vegetables and fruits to your desired thickness.
  2. Combine the first six ingredients in a non-reactive bowl, then mix in the cilantro and lime juice.
  3. Season with salt and pepper to taste, then chill in the fridge for at least 30 minutes before serving.
