Pineapple Mango Salsa

Ingredients

  • 1 medium pineapple, peeled, cored and diced (about 3 cups)
  • 1 medium mango, peeled, cored and diced (about 1 cup)
  • 1 medium jalapeno, seeded, ribbed and minced
  • ½ small red onion, peeled and minced
  • ½ cup fresh cilantro leaves, chopped
  • 2 limes zest and juice
  • ¼ teaspoon coarse salt

Instructions

  1. Chop the pineapple, mango, jalapeno, red onion, cilantro, and lime.
  2. In a large bowl, combine all the chopped ingredients with lime zest and salt.
  3. Taste the salsa and adjust seasoning if needed.
  4. Cover and refrigerate for at least 30 minutes before serving.
