Vegan Chipotle Ranch Dressing

Instructions
- Soak the cashews in very hot water for 30 minutes.
- While the cashews are soaking, measure out the almond milk and add lemon juice to curdle.
- Drain and rinse the cashews, then blend them with the almond buttermilk, garlic, salt, pepper, onion powder, vinegar, maple syrup, ground chipotle chile, and dill until creamy and smooth.
- Taste and adjust flavors as needed, adding more salt, chipotle, maple syrup, vinegar, or herbs to your liking.
- Use immediately or refrigerate for 3-4 hours to chill, adding more almond milk or water to thin if necessary.
