Vegan Chipotle Ranch Dressing

Ingredients

  • 1 cup raw cashews
  • cup unsweetened almond milk
  • 2 tsp lemon juice
  • 1 clove garlic
  • ½ tsp sea salt
  • 1 pepper chipotle pepper in adobo sauce
  • ¼ tsp onion powder
  • 1 tsp apple cider vinegar
  • ½-1 tsp maple syrup
  • ¼ tsp ground chipotle chile
  • 2 Tbsp fresh minced dill

Instructions

  1. Soak the cashews in very hot water for 30 minutes.
  2. While the cashews are soaking, measure out the almond milk and add lemon juice to curdle.
  3. Drain and rinse the cashews, then blend them with the almond buttermilk, garlic, salt, pepper, onion powder, vinegar, maple syrup, ground chipotle chile, and dill until creamy and smooth.
  4. Taste and adjust flavors as needed, adding more salt, chipotle, maple syrup, vinegar, or herbs to your liking.
  5. Use immediately or refrigerate for 3-4 hours to chill, adding more almond milk or water to thin if necessary.
