15-Minute Mexican Slaw for Tacos

Ingredients

The dressing

  • ¼ cup extra virgin olive oil
  • 3 tablespoons fresh lime juice
  • 3 tablespoons fresh orange juice
  • 1 tablespoon brown sugar
  • 1 teaspoon ground cumin
  • ½ teaspoon sea salt

The slaw

  • 1 14-ounce package coleslaw mix
  • ½ medium red onion, sliced thin
  • 1 medium jalapeno, seeded and diced
  • ¼ cup chopped fresh cilantro

Instructions

  1. Combine the olive oil, lime juice, orange juice, brown sugar, cumin, and salt in a bowl, jar, or blender and mix until smooth.
  2. In a large bowl, combine the coleslaw mix with the sliced onion and diced jalapeno.
  3. Pour the dressing over the slaw mixture and stir well to combine.
  4. Refrigerate for about an hour to allow flavors to meld.
  5. Toss with cilantro just before serving.
