Grilled Zucchini with Lemon Yogurt, Feta & Mint

Ingredients

The zucchini

  • 3 small-medium zucchini, quartered lengthwise, cut in half horizontally
  • to taste none Extra-virgin olive oil, for drizzling
  • to taste none Sea salt
  • to taste none Freshly ground black pepper
  • 1 small lemon, juiced

The lemony yogurt

  • ½ cup whole milk Greek yogurt
  • ½ small lemon, zested
  • ¼ clove garlic, finely minced
  • ¼ cup crumbled feta cheese
  • ¼ cup fresh mint leaves
  • a pinch none red pepper flakes
  • to taste none Sea salt
  • to taste none Freshly ground black pepper

Instructions

  1. Preheat the grill to high heat.
  2. Toss the zucchini with olive oil, salt, and pepper.
  3. Grill the zucchini cut-side down for about 2 minutes.
  4. Flip the zucchini and grill skin-side down for 3 to 4 minutes until char marks form.
  5. Remove the zucchini from the grill and transfer it to a plate.
  6. Squeeze lemon juice over the hot zucchini.
  7. In a small bowl, mix together the yogurt, lemon zest, garlic, and salt.
  8. Spread the yogurt mixture on a serving platter, top with the zucchini, feta, mint, and red pepper flakes.
  9. Season to taste and serve.
