Grilled Zucchini with Lemon Yogurt, Feta & Mint

The lemony yogurt

whole milk Greek yogurt

Instructions
- Preheat the grill to high heat.
- Toss the zucchini with olive oil, salt, and pepper.
- Grill the zucchini cut-side down for about 2 minutes.
- Flip the zucchini and grill skin-side down for 3 to 4 minutes until char marks form.
- Remove the zucchini from the grill and transfer it to a plate.
- Squeeze lemon juice over the hot zucchini.
- In a small bowl, mix together the yogurt, lemon zest, garlic, and salt.
- Spread the yogurt mixture on a serving platter, top with the zucchini, feta, mint, and red pepper flakes.
- Season to taste and serve.
