Ingredients

The cookie dough

  • cups all-purpose flour
  • 2 Tablespoons unsweetened natural cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup unsalted butter, softened
  • ¾ cup packed light or dark brown sugar
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • ¾ cup Nutella
  • 1 heaping cup chopped hazelnuts

The filling and topping

  • 28 soft caramel candies
  • optional coarse salt or sea salt for topping

Instructions

  1. Whisk together the flour, cocoa powder, baking soda, and salt in a bowl.
  2. Cream the softened butter and sugars until smooth, then add the egg, vanilla, and Nutella and mix well.
  3. Combine the wet and dry ingredients, then fold in the hazelnuts.
  4. Chill the dough for at least 3 hours in the refrigerator.
  5. Preheat the oven and prepare baking sheets.
  6. Shape the cookie dough, placing a caramel inside each ball and covering it completely.
  7. Sprinkle with coarse salt and bake until the edges are set.
  8. Let cool on the baking sheet before transferring to a wire rack.
