Cranberry Cocktail Meatballs

Ingredients

The meatballs

  • 1 lb ground beef
  • ½ onion finely chopped
  • ¼ cup whole wheat panko breadcrumbs
  • 2 cloves garlic, minced
  • 1 large egg
  • ¼ cup parmesan cheese, finely grated
  • 2 Tbsp tomato paste
  • 1 tsp salt
  • ¼ tsp pepper
  • 1 Tbsp fresh parsley, minced

The cranberry sauce

  • 1 cup fresh squeezed orange juice
  • cup honey
  • 12 oz fresh cranberries
  • ½ cup chili sauce
  • 1 tsp orange zest
  • a pinch cayenne pepper
  • to taste salt and pepper

Instructions

  1. Preheat the oven to 400°F.
  2. In a large bowl, combine ground beef, onion, breadcrumbs, garlic, egg, parmesan cheese, tomato paste, salt, pepper, and parsley until mixed well.
  3. Shape the mixture into 1-inch meatballs and place them on a baking sheet sprayed with cooking spray.
  4. Bake the meatballs for 20 to 25 minutes until browned and cooked through.
  5. While the meatballs bake, whisk together orange juice and honey in a saucepan over medium heat until honey dissolves.
  6. Add cranberries to the saucepan and cook for about 10 minutes until they start to pop.
  7. Reduce heat and add chili sauce, orange zest, and cayenne pepper, cooking for an additional 10 to 15 minutes.
  8. Mash cranberries for a jam-like consistency, adding water if a thinner sauce is desired.
  9. Remove the sauce from heat and season with salt and pepper.
  10. Toss the baked meatballs with the cranberry sauce, garnish with parsley, and serve.
