Healthy Whole-Wheat Crepes

Ingredients

  • 3 eggs eggs
  • 1 cup whole-wheat flour
  • 1 cup milk
  • ¾ cup water
  • 1 tablespoon honey
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon salt
  • 1 tablespoon butter (melted, + extra for cooking)

Instructions

  1. Blend all ingredients together and let the mixture stand for about 15 minutes.
  2. Melt a small pat of butter in a frying pan over medium heat.
  3. Pour enough batter into the pan to cover it in a thin layer, swirling the batter quickly.
  4. Use a spatula to push down the thin edges of the crepe.
  5. Cook for about 1 minute until golden brown, then flip carefully.
  6. Cook for another minute on the other side until golden brown, then roll up the crepe.
  7. Serve with maple syrup.
