Ingredients

  • ¼ cup coconut flour
  • 2 teaspoons baking powder
  • 12 large egg whites
  • 1 teaspoon spices of choice (salt, pepper, etc.)

Instructions

  1. Combine egg whites, coconut flour, baking powder, and spices in a mixing bowl and whisk until well mixed.
  2. Let the mixture sit for several minutes to thicken.
  3. Grease a large non-stick pan and heat on low-medium.
  4. Pour ¼ cup portions of the mixture into the pan and spread it out.
  5. Cover the pan and cook until bubbles appear around the edges, then flip and cook for another 1-2 minutes.
  6. Repeat until all batter is used.
  7. Allow the flatbreads to cool completely before using.
