Light and Flaky Pie Crust

Double Crust Pie

Instructions
- Combine flour and salt in a bowl and add shortening in small cubes.
- Cut in shortening until the mixture resembles pea-sized pieces.
- Sprinkle ice water over the mixture, one tablespoon at a time, gently turning the dough to moisten it.
- Pat the dough into a ball and wrap it in plastic wrap, refrigerating until ready to use.
- When ready, roll out the dough on a floured surface to about ⅛ inch thick.
- Transfer the rolled dough to a pie plate and trim the edges as desired.
- For a pre-baked crust, prick the bottom with a fork and bake at 450°F for 10-12 minutes until golden brown.
