Ingredients

Single Pie Crust

  • 1 ¼ cup all-purpose flour
  • ½ teaspoon table salt
  • cup shortening
  • 1 tablespoon shortening
  • ¼ cup ice water

Double Crust Pie

  • 2 ½ cups all-purpose flour
  • 1 teaspoon table salt
  • cup shortening
  • 2 tablespoons shortening
  • ½ cup ice water

Instructions

  1. Combine flour and salt in a bowl and add shortening in small cubes.
  2. Cut in shortening until the mixture resembles pea-sized pieces.
  3. Sprinkle ice water over the mixture, one tablespoon at a time, gently turning the dough to moisten it.
  4. Pat the dough into a ball and wrap it in plastic wrap, refrigerating until ready to use.
  5. When ready, roll out the dough on a floured surface to about ⅛ inch thick.
  6. Transfer the rolled dough to a pie plate and trim the edges as desired.
  7. For a pre-baked crust, prick the bottom with a fork and bake at 450°F for 10-12 minutes until golden brown.
