The Herb Oil

Instructions
- Make the herb oil by heating olive oil and adding chopped herbs, salt, pepper, and garlic. Let steep.
- Mix flour, salt, and yeast in a bowl. Add olive oil and water, mixing until a sticky dough forms.
- Transfer the dough to a floured surface, shape into a rectangle, and let it relax for 5 minutes.
- Stretch the dough and fold it, then cover and let it rest for 30 minutes.
- Repeat the stretching and folding process two more times, resting for 30 minutes each time.
- Let the dough ferment for 1 hour at room temperature.
- Prepare a baking pan with parchment paper and olive oil, then transfer the dough to the pan.
- Dimple the dough with your fingers and spread herb oil over it, then cover and refrigerate overnight.
- Before baking, let the dough proof at room temperature for 3 hours, then preheat the oven.
- Bake the focaccia until golden brown, rotating the pan halfway through.
- Cool the focaccia for at least 20 minutes before cutting and serving.
