Basil and Sun-Dried Tomato Crackers

Ingredients

The dough

  • 1 cup all-purpose flour
  • ¾ cup whole-wheat flour
  • ½ tsp salt
  • 3 tbsp olive oil
  • ½ cup water
  • 3 tbsp sun-dried tomatoes, minced
  • 3 tbsp fresh basil, chopped

For sprinkling

  • to taste sea salt

Instructions

  1. Preheat the oven to 350°F.
  2. In a medium bowl, whisk together the flours and salt.
  3. Add the olive oil, water, sun-dried tomatoes, and basil, and stir until just combined.
  4. Line a large baking sheet with parchment paper and transfer the dough onto it.
  5. Roll out the dough to about the thickness of a saltine cracker.
  6. Use a knife or pizza cutter to mark the dough into rectangles without cutting all the way through.
  7. Prick each cracker with a fork a few times and sprinkle with sea salt.
  8. Bake for 15-25 minutes until crisp and just beginning to brown.
  9. Allow to cool completely, then break into individual crackers.
  10. Store in an airtight container.
