Ingredients

The crackers

  • 1 ½ cups all purpose flour
  • 2 teaspoons fresh herbs of choice (e.g., thyme)
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 2 tablespoons olive oil
  • ½ cup cold water

For serving

  • to taste Alouette Le Bon Dip or Le Petite Fromage

Instructions

  1. Preheat the oven to 450°F.
  2. Pulse the flour, herbs, pepper, salt, sugar, and olive oil in a food processor until well mixed.
  3. Add the cold water and pulse until the dough starts to come together.
  4. Form the dough into a ball, cut it into four pieces, and let it rest for about 10 minutes.
  5. Roll out each piece of dough as thin as possible and place on parchment paper on a baking sheet.
  6. Bake for 4-5 minutes, flipping the crackers halfway through, until golden brown.
  7. Turn off the oven and let the crackers sit inside for 1-2 hours to dry out and become crispy.
  8. Break into pieces and serve with the cheese dip.
