Ingredients

The dough

  • 6 ounces sharp yellow cheddar cheese, shredded
  • 1 cup all-purpose flour
  • teaspoons cornstarch
  • ¼ teaspoon salt
  • 6 Tablespoons unsalted butter, cold and cut into pieces
  • 2 Tablespoons cold water

Optional topping

  • to taste sea salt for sprinkling

Instructions

  1. Combine cheddar cheese, flour, cornstarch, and salt in a food processor until mixed.
  2. Add butter and process until the mixture resembles wet sand.
  3. Add cold water and pulse until the dough forms large clumps.
  4. Transfer dough to a floured surface, divide in half, and pat each into a square.
  5. Wrap each square in plastic wrap and refrigerate for about 45 minutes.
  6. Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
  7. Roll out each dough square to about 9 inches and cut into 1-inch squares.
  8. Place the squares on the baking sheet, poke holes in the center, and sprinkle with sea salt if desired.
  9. Bake until golden brown around the edges, about 16-20 minutes, rotating halfway through.
  10. Cool completely on the baking sheet before serving.
