Homemade Cheese Crackers

unsalted butter, cold and cut into pieces

Instructions
- Combine cheddar cheese, flour, cornstarch, and salt in a food processor until mixed.
- Add butter and process until the mixture resembles wet sand.
- Add cold water and pulse until the dough forms large clumps.
- Transfer dough to a floured surface, divide in half, and pat each into a square.
- Wrap each square in plastic wrap and refrigerate for about 45 minutes.
- Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
- Roll out each dough square to about 9 inches and cut into 1-inch squares.
- Place the squares on the baking sheet, poke holes in the center, and sprinkle with sea salt if desired.
- Bake until golden brown around the edges, about 16-20 minutes, rotating halfway through.
- Cool completely on the baking sheet before serving.
