Homemade Cheese Crackers

Instructions
- Mix butter, flour, mustard, and salt in a stand mixer until crumbly.
- Add cheese and mix briefly.
- Combine water, vinegar, and ice in a measuring cup, then add to dough gradually until it forms a ball.
- Wrap the dough in waxed paper or plastic wrap and refrigerate for at least 2 hours.
- Preheat the oven to 325°F (160°C) and grease baking sheets.
- Roll out the dough on a floured surface to ⅛-inch thickness and cut into shapes.
- Transfer to baking sheets, adding seeds if desired, and bake for 18-25 minutes until browned.
- Turn off the oven, prop the door open, and let the crackers crisp for at least 20 minutes.
