Instructions
- Soak the cedar plank in orange juice or water for at least 30 minutes.
- Combine brown sugar, paprika, cayenne, garlic powder, thyme, salt, and pepper in a small bowl.
- Preheat the grill to medium heat (about 350°F).
- Place the salmon fillet on the cedar plank and sprinkle with the seasoning mix. Rub with olive oil.
- Grill the salmon on the cedar plank for about 12-15 minutes, checking for doneness.
- Remove the plank and salmon from the grill and let rest.
- For the salsa, combine watermelon, mango or pineapple, jalapeno, cilantro, lime juice, and honey in a bowl. Add feta and toss gently.
- Serve the salmon topped with watermelon feta salsa.
