Ingredients

The salmon

  • 1 large cedar plank
  • 1 pound whole salmon fillet
  • 2 tablespoons dark brown sugar
  • 1 tablespoon paprika
  • ½ teaspoon cayenne
  • ½ teaspoon garlic powder
  • ½ teaspoon dried thyme
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • to taste none olive oil
  • orange juice or water for soaking

Watermelon Feta Salsa

  • ½ cup small seedless watermelon
  • 1 cup fresh diced mango or pineapple
  • 1 none jalapeno
  • ¼ cup fresh cilantro
  • 2 none limes
  • 1 tablespoon honey
  • 4 ounces feta cheese

Instructions

  1. Soak the cedar plank in orange juice or water for at least 30 minutes.
  2. Combine brown sugar, paprika, cayenne, garlic powder, thyme, salt, and pepper in a small bowl.
  3. Preheat the grill to medium heat (about 350°F).
  4. Place the salmon fillet on the cedar plank and sprinkle with the seasoning mix. Rub with olive oil.
  5. Grill the salmon on the cedar plank for about 12-15 minutes, checking for doneness.
  6. Remove the plank and salmon from the grill and let rest.
  7. For the salsa, combine watermelon, mango or pineapple, jalapeno, cilantro, lime juice, and honey in a bowl. Add feta and toss gently.
  8. Serve the salmon topped with watermelon feta salsa.
