Cedar Planked Salmon

salmon (3 fillets, coho recommended)
The seasoning

Gustus Vitae Jamaican seasoning or favorite spice blend

extra virgin olive oil
The equipment
Instructions
- Soak the cedar plank in water for at least 1 hour, preferably 2-3 hours.
- Brush the salmon fillets with olive oil and sprinkle with the Jamaican seasoning mix.
- Place the salmon on the soaked cedar plank and set it on a preheated grill at 450 degrees Fahrenheit.
- Close the lid and cook the salmon for 15-18 minutes until it reaches the desired doneness.
- Remove the salmon fillets from the cedar plank; the skin should peel off easily.
- Serve immediately with your favorite sides.
- Discard the cedar plank after it has completely cooled.
