Ingredients

  • 1 plank cedar plank, soaked in water 1-2 hours
  • 4–5 pieces salmon, wild, skin-off, thicker cuts
  • 1 tablespoon olive oil
  • 2 tablespoons Northwest Salmon Rub or salt, pepper, and lemon zest
  • to taste fresh thyme

Instructions

  1. Soak the cedar plank in water for 1-2 hours.
  2. Preheat the grill to medium-high heat.
  3. Brush the salmon with olive oil and season with the salmon rub or salt, pepper, and lemon zest.
  4. Place the soaked cedar plank on the grill and grill until it smells smoky and grill marks appear, about 4 minutes.
  5. Flip the cedar plank over and place the seasoned salmon on top.
  6. Lower the heat, cover the grill, and cook until the salmon reaches an internal temperature of 130-135°F, about 10 minutes, adding thyme halfway through.
