Instructions
- Preheat the oven to 400°F and roast the corn for about 15 minutes.
- Cook the bacon in a pot until crispy and set aside.
- In a bowl, mix corn meal, flour, salt, black pepper, smoked paprika, cayenne pepper, and baking powder.
- Add milk, eggs, lime zest and juice, cheddar cheese, bacon, and corn to the mixture and combine.
- Heat oil in the pot and drop spoonfuls of the batter into the oil, frying until golden brown on both sides.
- Prepare the chive dip by mixing yogurt or sour cream with chives and black pepper.
- Serve the fritters with the dip.
